The Ceratonia Siliqua or simply Carob tree is a fruit plant native to Asia, but well established in the Italian Mediterranean climate. It is an evergreen shrub with an almost linear trunk that branches upwards and can reach up to 10 metres in height; it has light green elliptical leaves with roughly jagged edges. It blossoms in autumn, producing very small, inconspicuous, reddish-green flowers in the axils of the leaves, which are followed by fruits that ripen in late summer and autumn. The fruit is

The Carob tree has many culinary uses in fact it can be eaten fresh or dried, the seeds can be ground to create flour or as a chocolate substitute. It is also cultivated for ornamental purposes in gardens and public parks for its rusticity, longevity and the coolness its thick, rounded foliage provides. The plant is not afraid of frost down to -7 degrees Celsius, and prefers sunny locations, adapting however to partial shade positions; good quality, well-drained universal soil is recommended, with watering not too frequent as it tolerates short periods of drought.
